The Golden Thickness Standard: Each piece of ox tail is meticulously cut by our butchers to a uniform thickness of approximately 1.5 inches. This optimal thickness ensures that during long braising processes (such as Borscht or Red Wine Braised Ox Tail), the flavorful juices and marrow are locked inside, and the meat remains intact without falling apart.
Weight-Based Standard: Our primary standard for fulfillment is based on net weight, with each package guaranteed to be a full 800 grams (vacuum-sealed).
Natural Shapes & Sizes: Since a whole ox tail is a natural ingredient, the cross-sectional area varies significantly from the thick base to the thin tip. To ensure each pack reaches the full 800g weight, the ox tail pieces in your package may vary in size (the front section has more meat and larger pieces, while the end section has smaller pieces but richer marrow).
