The main differences among the three lie in their farming methods, origin, and quality certification levels:
Bouchot Mussel Original Price: $115 / 700g | Promotional Price: $95 / 700g
Definition: "Bouchot" refers to a traditional farming technique where mussels are grown on wooden poles in intertidal coastal zones rather than a specific brand.
Characteristics: Grown with natural tidal exposure, resulting in firm, grit-free/parasite-free meat with a crisp, sweet flavor.
Origin: Produced across various coastal regions in France (e.g., Normandy, Brittany).
St. Michel Mussel Original Price: $135 / 700g | Promotional Price: $115 / 700g
Definition: Bouchot-cultivated mussels grown specifically in the waters of Mont-Saint-Michel Bay, France.
Characteristics: Benefit from extreme tidal range and rich plankton in the bay, producing plump meat with a high flesh ratio and a rich, natural sea-urchin-like sweetness. Typically carries the AOP (Protected Designation of Origin) status.
St. Michel Label Rouge Mussel Original Price: $158 / 1kg | Promotional Price: $130 / 1kg

Advance Order: Please order 3–5 days in advance.
Delivery Schedule: Deliveries available Thursday through Sunday only.
Freshness: Please consume as soon as possible after delivery to enjoy peak quality.
Rinse in Cold Water: Gently rinse under cold running water to wash away surface sand and debris.
Remove the Beard: The hairy fiber protruding from the shell seam is called the "beard" (byssal thread). Before cooking, firmly grab the beard and pull it toward the narrow hinge end of the shell to remove it.
Do Not Soak: Mussels are saltwater shellfish and will suffocate/die quickly if left submerged in fresh water.
Before Cooking:
Slightly open? Tap the shell lightly with your fingers or the back of a knife. If it slowly closes, it is alive. If it remains open, it is dead—discard it immediately.
Cracked shell? Discard any mussels with broken or cracked shells.
After Cooking:
Discard any mussels that remain tightly closed after cooking, as they were likely dead before heat was applied.
Keep Breathable: Never seal live mussels in airtight plastic bags or containers.
Refrigeration: Store in the main fridge compartment (approx. 2°C – 5°C).
Moisture: Place in a bowl or colander covered with a damp cloth or wet paper towel to retain moisture. Consume within 1–2 days.
