Bone-in steaks not only insulate against heat, preventing overcooking, but the marrow and fat within the bone also enhance the flavor of the beef. The collagen between the bone and meat keeps the meat tender and juicy. Furthermore, the large bone helps maintain the steak's shape, preventing juice loss during cooking and resulting in a more concentrated and flavorful steak. You can use a food thermometer to measure the meat's temperature: rare (approximately 52-55°C), medium (approximately 56-60°C), medium (approximately 62-65°C), and well-done (over 70°C).
Tip: Don't discard the remaining bones with some meat and tendons attached; they're excellent for making borscht!
