Hanging Tender is a muscle connecting the diaphragm, and each cattle has only one oyster blade. This is a rare and highly sought-after cut, famous for its unique location and tenderness. Due to the minimal activity in this part of the cattle, the meat is very tender, with a layer of fascia on the surface and a straight fascia in the middle, forming a V-shape. Typically, butchers will remove the surface and middle fascia, delicately dividing the oyster blade into two parts. The oyster blade has a tender texture, rich beefy flavor, and is suitable for hotpot or grilling on a hot plate, both of which are excellent choices.
