Saikyo-style Baked Black Cod:
Mix sugar, Saikyo miso paste, and egg yolk evenly. Add half the amount of sake and mirin, mix well, then add the remaining half (if the marinade is too dry, you can add an extra 1-1/2 tablespoons of mirin)
Wash the cod fillet and pat dry. Place the fish slices in the marinade, ensuring they are fully immersed, cover with plastic wrap, and marinate in the refrigerator for 48 hours
Remove the fish pieces and wipe off all the marinade
Preheat the oven to 230 degrees Celsius, place the fish on the top rack, and bake for about 20 minutes
Tips: Remember to remove excess marinade before baking to prevent it from being too strong in flavor and burning easily
Simple Pan-fried Black Cod Fillet:
Thaw the cod fillet and pat dry
Sprinkle pepper evenly on the fish, add a little wine and soy sauce, mix well, marinate for about 15 minutes. Then sprinkle a thin layer of cornstarch on the fish
Heat a pan, sauté ginger slices, place the fish in the pan, and fry over medium-high heat for 2-3 minutes until the bottom is golden brown
Carefully flip the fish fillet, continue frying for another 2-3 minutes until both sides are golden brown. You can use chopsticks to insert into the center of the fish to check if it is fully cooked. Enjoy your cooking!
